Berkshire pigs are a rare breed originating from the county of Berkshire in England. In the US, the American Berkshire Association, gives pedigrees only to pigs directly imported from established English herds or to those tracing directly back to such imported animals. The pig is also bred in Japan, under the trademarked name Kagoshima Kurobuta! The meat's color is red more like wild boar and is intensely marbled.
The Milanese cut comes from each end of the rib rack, so the chops tend to vary in size. Don't be surprised if one is a little bigger than the other and every once in a while one of the ends will dramatically thicker than the other. Just give the larger piece a bit more time in the oven, grill or skillet and enjoy. Eleni and I think these Berkshire Chops are every bit as good as our steaks while being one of the most affordable main courses in the store.
Uncle Jerry's 1,2 3 method in a dry skillet is very simple. Oven at 375°, then take the chops and roll them in a little EVOO to lightly coat. Season with coarse salt and pepper. Heat a skillet or grill pan up to medium hot about 400°. Place the chops in the skillet and "brown" for about 2 minutes on each side. You want the chops to start sizzling as soon as they touch the skillet but you don't need to hit them with as much heat as you would with beef. At the end of 4 minutes slide the skillet or grill pan right into the 375° oven for another 4 minutes. Use mits to pull the skillet from the oven and place in a warm plate and let rest for 5 minutes. This produces a chop with a nicely caramelized crust and a pink center... pork this good should be served medium rare.
These chops have a much richer and more satisfying flavor than what most folks are used to and are perfect right out of the skillet. However, if you like sauce or toppings but don't have time to make your own here are a few suggestions. Our Estate Bottled EVOO works with just about everything but a few other ideas are....Mitica Romesco Sauce (ground almond combined with the usual suspects) from Spain is fantastic, Ritrovo's Ligurian Pesto or just drizzle a little of Ritrovo's 6-year old Balsamic Vinegar on the chops. Just about anything from the Gracious Gourmet works including their Hatch Chili Pesto (our personal fave), Garden Tomato Pesto, Chile Red Pepper Tapenade, Portobello Mushroom Tapenade or Roasted Vegetable Tapenade!
