Nairagi Striped Marlin

Visible marbling makes it a shame to cook this grade of Nairagi (Striped Marlin) we often use it to make Poke. About $14 a pound less than our Classic Ahi Poke the texture and taste are sensational.  Extremely rare and reminiscent of Ahi Toro for its valuable oil content, it's a sashimi lover's dream. When cooked, it goes from a  cream orange color to a mild pink and maintains moisture. Raw Nairagi is a little known secret of the Hawaiian islands. Texture qualities offer a candy smooth firmness which makes great tartar, or simply sliced.

"Having grown up in Florida and spent most of my adult life traveling the Caribbean for a living I always looked upon fresh seafood as a god given right!  I actually thought I could give it up for powder days in Utah but it didn't work out the way I planned it.  Now we fly in fish from Hawaii almost every week.   It is a simple process at 4-5 AM Hawaiian  time I call Carolyn and after a brief discussion of the day's surf report we shop the auction for what's come in overnight.  We only buy from day boats so the fish is always exceptionally fresh!  The Mahi Mahi is actually caught on a rod and reel and everything we buy is SASHIMI GRADE!
