Premium grades of Hawaiian Ahi are highly sought by connoisseurs across the globe.  Known for it's unbelievably silky texture, all it needs is a sharp cold knife to slice through each ribbon of tender meat, and a splash of shoyu if you must. According to Honolulu Fish Company founder, Wayne Samiere, "you won't find this selection at any other fish company in America. Out of a thousand hand picked Ahi, we will choose eight that fit this category." 

Our favorite way to enjoy Ahi is to slice it into thin slabs and then add tiny match stick slices of red onion and drizzle one of our Flos Olei Award Winning EVOO's.  Finish it off by dusting the plate wit Maldon Sea Salt Flakes....Sensational!

"Having grown up in Florida and spent most of my adult life traveling the Caribbean for a living I always looked upon fresh seafood as a god given right!  I actually thought I could give it up for powder days in Utah but it didn't work out the way I planned it.  Now we fly in fish from Hawaii almost every week.   It is a simple process at 4-5 AM Hawaiian  time I call Carolyn and after a brief discussion of the day's surf report we shop the auction for what's come in overnight.  We only buy from day boats so the fish is always exceptionally fresh!  The Mahi Mahi is actually caught on a rod and reel and everything we buy is SASHIMI GRADE!
