Spot Prawns

Spot prawns (come frozen ...best way to offer shrimp) are a real treat and impressive. The average prawn will fit in the palm of your hand and weigh from a 1/4 -1/2 a pound.
The easiest way to prepare them is to use cooking shears to open the back of the tail and devein them if necessary. Marinate prawns in olive oil, garlic and red pepper flakes. A nice twist is to saute the garlic and pepper flakes in EVOO let cool and then add an ounce or so of your favorite liqueur to crown the marinade (Pernod or Cointreau come to mind). Marinate prawns tossing occasionally for an hour before the heavy lifting. Grill for 2 minutes a side and enjoy! Sounds easy ....it is! I am told you can fry the heads in corn starch but haven't tried that yet even though I have enjoyed this delicacy in sushi bars for many years. Got to have somehing to look forward to.
