Creminelli just won another SOFI Award for their Campania Chub.  Campania Salami is sometimes referred to as Napoli salami, which is kind of a misnomer. Napoli salami is actually made all over the Campania region.  Campania had on occasion been ruled by the Spanish and the Turks, this accounts for the flavors of sweet and spicy paprika and cayenne.

"Salami makers in Campania stored their spicy product in a terra cotta jar under ashes, a method that kept the temperature cool and imparted a smoky flavor. Creminelli makes its Campania salami with the same rule of spice and smoke. Cristiano uses smoke to evoke the ashes, The smokiness rounds out the spiciness of the salami.
