Confit is the art of submerging a piece of meat in it's own rendered fat then cooking it low and slow till tender.  D'artagnan Duck Confit is made from Moulard duck legs seasoned with garlic herbs and spices.  It's already cooked so to  finish simply brown in a skillet till crisp and perhaps allow the skin to crisp a little more in the center of your oven on low broil. All you really want to do is crisp the skin so don't over do it!   

When you need a quick meal for guests that drop in unexpectedly Duck confit is perfect.  It stores easily in the fridge for weeks in the packaging.  Serve Duck Confit on a bed of spring greens with a light herb vinaigrette and salt potatoes browned in what else ....duck fat.  Looks beautiful and tastes even better.
