Mahi Mahi as it is known in Hawaii or Dorado in the Caribbean is pink fleshed with a mild in flavor.  Easy to prepare grilled, pan roasted or broiled it is a favorite in fish tacos or simply served with your favorite tomato, chilli or fruit based salsa.
