We get AIX from a very small importer and good friend named Zach Locke.  He hand picks each winemaker in his book and appreciates those who incorporate the green thing into their vineyards and winemaking.  AIX has a crisp acidity balanced with soft summer fruits.  It's a really great afternoon wine and goes with all sorts of food and appetizers. 

Last night I crushed a couple of garlic cloves into a bowl, added the juice of half a lime, some sea salt and pepper and a pinch of red pepper flakes then whisked in 3 TBS. of Lucero Abrequina EVOO .  Next I shelled and deveined a pound of Wild Atlantic Shrimp (I can ship these to you) then arranged them on skewers and brushed on the marinade. Got the Big Green Egg rolling to 375° and after about 20-30 minutes in the marinade put them on the grill for exactly 2 minutes a side and plated them and garnished with a a touch of chopped  cilantro …served with a salad of spring greens, toasted walnuts, Arbequina olives and tossed in a white balsamic vinaigrette …..AIX light and  refreshing like crisp white wine with flavor notes of red was great from prep through dinner.
