"Hebi" Spearfish

Hebi's flesh runs the range of color from translucent pink to amber the texture is softer and more delicate than most other billfish species. The majority of Hawaiian Hebi comes from long line boat catches although it has been known to strike surface lures as well. It's the smallest of all the billfish family. It is available year round although more abundantly in the summer months. It has a mild flavor and is often grilled although it can be cooked in a variety of ways. Carolyn tells me it is Native Hawaiians favorite billfish.
"Having grown up in Florida and spent most of my adult life traveling the Caribbean for a living I always looked upon fresh seafood as a god given right! I actually thought I could give it up for powder days in Utah but it didn't work out the way I planned it. Now we fly in fish from Hawaii almost every week. It is a simple process at 4-5 AM Hawaiian time I call Carolyn and after a brief discussion of the day's surf report we shop the auction for what's come in overnight. We only buy from day boats so the fish is always exceptionally fresh! The Mahi Mahi is actually caught on a rod and reel and everything we buy is SASHIMI GRADE!
