The Creminelli family has been curing meats in the Piedmont of Italy for over 4 centuries. The have had a storefront since 1906. So you could say Cristiano Creminelli has this craft embedded in his DNA. He became enamored with America and so brought the family business to Salt Lake City. One of the reasons he chose SLC is that the cool climate in the foot hills of the Wasatch reminded him of home. Cool climate influences the process of curing meats just like it influences making wine. It produces a velvety texture and rounder flavors than warmer climes.
With the skills Cristiano brought with him from having run all aspects of the family business in Italy he was already the best salumari in the world when he started making salamis in the basement of Tony Caputo's. A funny thing happened shorty after arriving in SLC his genius showed and he began to break out of the family mold creating new flavor profiles. First incorporating Barolo Wine in a recipe then White Truffle last year he partnered with the crew of park City's High West Whiskey... Cristiano is in full flight. He uses only Duroc Pork from farms in Utah and the surrounding states, organic non GMO spices, sea salts from around the world, even organic hemp to tie off the salamis. Best of all he never uses preservatives or nitrates. It is a very clean product.
In Crossroads we carry the entire line up. The chubs are great for just about any occasion and simple to deal with just slice them by hand tear off the casing and enjoy. We also stock his large formats, which are homage to the traditional regional salamis and hams of Italy all made with the Creminelli touch. The large formats require that you have a slicer for best results. If you entertain and have a slicer or utilize a caterer who will has a slicer allow us to coordinate a selection of Creminelli's meats. Whether you serve them as a nibble or the best sandwich board on the planet we are happy to share our serving ideas and pairings. For large events please give us a little notice.
