Lamb was never at the top of our list of favorite foods till we started bringing in D'Artagnan's racks of Rocky Mountain Lamb. Raised in pristine high mountain pastures the Rambouillet/Suffolk breed lambs are raised sustainably and never given antibiotics or hormones. The lambs are raised to the age of six to nine months and finished with a minimal supplemental grain feed which contains no animal by-products.
A simple way to enjoy these racks is to cut them into chops, marinate in olive oil, garlic and either Rosemary or Mint for an hour or two. Let the chops come up to room temp then season with salt and pepper and place on a medium hot grill for 3 minutes a side. Let them rest and enjoy!
