Region… COTES DU RHONE…Village: Montfrin Farmed Organic 95 points 2011 - Flos Olei Guide Medium Fruit. 30% Calian, 30% Petit Ribiers, 40% blend of other varieties. Trees are over 90 years in age. The entire production of Moulin de Ombres "Mill of Shadows" is certified organic by the European Union. Olives are harvested in late October for optimal amount of antioxidants and Vitamin A. Pressed and lightly filtered for best flavor and longevity in this extra virgin olive oil. Uses: Grilled salmon, potato au gratin, vegetables au gratin, bean soups, mushroom risotto. 500 ml. bottle

1 tsp. Kozlik's Fig and Balsamic Mustard
1 tbs. Prelibato Riserva – White Balsamic Vinegar
Add sea salt and pepper to taste then whisk till salt is dissolved into the vinegar....Whisk in 2-3 tbs.of Moulin Des Hombres EVOO a little at a time so that mixture will emulsify and enjoy.  Use just enough and save any additional dressing in the fridge for another meal!
