Some of our clients like a bigger more consistently sized chop than D'artagnan's Milanese Chops so we bring these beautiful racks for them. This 8 Rib Frenched Rack (2 per pack) Average 9 lbs per pack is a treat and perfect for medium sized dinner party. 16 luscious Berkshire pork chops will work in any season and can be cooked up in a flash on the stove top or in the oven. Sweet, juicy, and delightfully tender, these pork chops are also excellent when grilled or quickly broiled.
Just take care not to overcook this pork! In 2011 the USDA lowered the recommended temperature for pork from 160 degrees to 145 degrees, confirming what chefs have known all along: slightly pink pork is best.
