Just got finished sampling Trinity's current release of Saisons the "Case of the Mondays Series" with Trinity Brewer Jason (pictured left... a total beer savant) and Gordo (their in house artist, love his sense of humor on the labels). It's not like we have a ton of Trinity to sell... we hand them out one at a time like we do Pliney the Elder. Yes it is that hard to come by. In fact they don't really sell beer ...they kind of leak a little of it around the state of Colorado to fuel their totally "mysto" image. Crossroads Local Experts, Scott and Alex were in on the tasting. We all agree that Jason who is literally part scientist, part historian, part brewer and full time inventor may be the best brewer in the state. His focus is on slow and natural with a strong connection to food and the culinary aspects of brewing. All of the Trinity beers are bottle conditioned and ageable some up to 20 years.
Jason (pic 2) brought up the subject of Brett or Brettanomyces in relation to beer.saying that this strain of yeast is an important component in the flavor profile of his TPS Report. Brett introduces a range of flavors that can not be produced any other way (sweaty goat, bitter leather, cork, wood, straw, barnyard, wet wool, peach cherry pie and apple). For me Brett is a mixed bag as some of these flavors don't work well in wine. MS Sean Razee once told me that thought Brett was a sign of a winemaker not handling their barrels properly. There are times when Brett works and there are others when it just doesn't with wine. However in the case of brewing and especially in the Trinity TPS Report it seems to be a totally functional component. Beer seems to acquire the fruit aspects of Brett more than the barnyard aspects. The subject of Brett in the brewing process comes up a lot these days and Jason appears to use it to his advantage!
Red Swingline IPA Primitif was another knock out brew that was quite different. Best described as a hoppy sour. You would never guess it was 100 IBUs considering how smooth the beer was. This seemingly contrary blend of styles in the Red Swingline IPA Primitif is accomplished by starting off with a sour beer and then hopping it afterwards..There was a good bit of graduate level biology in Jason's description of how he made this beer with a tart sour mouth and a soaring hop finish but enough gushing. It was a very good day at the office.
In a nut shell Trinity is a very special Craft Brewer. If you get a chance to buy one snap it up!
